This recipe is a favourite with all the children and staff alike! It’s a good way of ensuring that you are well on your way to eating five vegetables a day!
350 g Pitted dates
200 ml Water
140 g Butter or margarine
225 g Plain flour
115 g Rolled oats
85 g Soft dark brown sugar
Preheat oven to gas 6 / 400˚F /200˚C
Grease a 28 x 18 cm tin
Cook the dates in the water until they are very soft (like jam). Allow to cool slightly.
Rub the butter into the flour until mixture resembles breadcrumbs. Add the sugar and rolled oats.
Press half the mixture into the tin and spread over the date mixture. Sprinkle remaining crumble mix over the top and press down gently.
Bake for 20 – 25 minutes until golden brown.
